Chickpea, Sweet Potato Curry

Base for two people

Quinoa

  • 1 c quinoa
  • 1 3/4 c water

Combine. Boil then simmer 15 minutes. Remove from heat, and cover. Let rest 10 minutes.

Curry

  • 1 Tbs olive oil
  • 1 onion (white or yellow)
  • 1 Tbs ginger (minced) or 1 tsp (ground)
  • 4 cloves garlic (minced)
  • 1 1/2 Tbs curry powder
  • 2 tsp garam masala
  • 1 cup plant based milk (soy, oat, almond)
  • 1 can tomatoes
  • 1 can coconut milk (full fat)
  • 1 lg sweet potato (diced)
  • 2 cups spinach
  • 2 Tbs lemon juice

Sautee vegetables. Add spices. Add milks and tomatoes. Simmer low 5 minutes. Add sweet potatoes. Simmer 20-30 minutes. Add spinach. Simmer 5 minutes.
